Jack-O-Lantern Stuffed Peppers

A fun and healthy Halloween dinner idea!

Ingredients:

  • 4 orange bell peppers
  • 1 lb ground beef or turkey
  • 1 cup cooked rice
  • 1 cup tomato sauce
  • ½ cup shredded cheese
  • Salt & pepper to taste

Instructions:

  1. Cut the tops off the bell peppers and scoop out the seeds.
  2. Carve jack-o’-lantern faces into the sides.
  3. Cook ground beef, then mix with rice, tomato sauce, and seasoning.
  4. Stuff the peppers and sprinkle cheese on top.
  5. Bake at 375°F (190°C) for 25 minutes.
